Tawa Paneer Makhani | Tawa Paneer Masala | Tawa Paneer Fry | Tawa Paneer Makhanwala | Paneer Makhan Masala | Paneer Masala Fry | Paneer Recipe
Ingredients:
– Paneer, cut into small cubes- 200 gms
– Onions, fine chopped- 2 medium
– Ginger chopped- 1” piece (3 tsp chopped)
– Green chillies, deseeded & chopped- 1 big or 2 small ( 1 tsp chopped)
– Ajwain (Carom seeds)- 1/4 tsp
– Red Chilli powder- 1 tsp
– Coriander powder- 1.5 tsp
– Kashmiri Chilli powder( optional) – 1/2 tsp
– Garam Masala Powder- 1/2 tsp
– Coriander leaves, chopped- 1/2 cup
– Oil- 2 tbsp
– Makhani Gravy- 1 cup( 230 ml)
– Salt- 1/2 tsp or to taste
For Makhani Gravy:
A.
– Tomatoes, quartered- 2 medium
– Green chilli- 1 big or 2 small
– Ginger garlic paste- 11/2 tsp
– Red Chilli Powder- 1/2 tsp
– Green cardamom- 3
– Cloves- 4
– Salt- 1/2 tsp
B.
– Butter- 1 tbsp
– Fresh cream – 2 tbsp
– Kasuri Methi – 1 tsp (Fenugreek leaves)
– Honey- 1 tsp (optional)
Preparation:
Make Makhani Gravy-
– In a pressure cooker, add all the items indicated in ‘A’ . Add little more than a cup of water & pressure cook for 2-3 whistles.
– Once it cools, strain it with a strainer in a saucepan.
– Keep the saucepan on heat & let it boil to thick the gravy.
– Now simmer & add the cream, butter, kasuri Methi & a teaspoon of honey .
– Mix well & cook on low for around 3-4 mins till the gravy is of thick consistency.
– Set aside for use later. The gravy should be around a cup.
Process:
– Take a tawa or a frying pan.
– Heat 2 tbsp of oil & once hot, add 1/4th tsp ajwain & allow it to splutter.
– Now add the chopped onion & saute for a minute.
– Add in the chopped ginger & green chillies & sauté for 2-3 mins till it’s light brown in colour.
– Add the red chilli powder & coriander powder and a splash of water. Cook on high for a minute till oil separates.
– Add in the paneer pieces & mix everything well. Fry well for around 2-3 mins to coat them with the masala.
– Now add half of the makhani gravy & fry until the gravy becomes thick & coats the paneer pieces.
– Add the balance Makhani gravy & add 1/2 tsp salt, garam masala powder & Kashmiri chillli Powder (optional). Mix everything well & fry till the paneer pieces are coated and the gravy dries up.
– Garnish with chopped coriander leaves. Mix & simmer for a minute or two.
– Serve hot with roti or naan.
