sweet potato masala stir fry is an Indian style sweet potato upma which can be had as a healthy breakfast or lunch. Sweet potato is filling and loaded with fibre and will help to keep you satiated for long thus helping in weight loss and weight management. Sweet potatoes are packed with Vitamin A, a medium sized sweet potato has about 400% of the daily vitamin A requirement.
Ingredients:
2 medium sweet potatoes
1 tsp coconut oil
1/2 tsp mustard seeds
1/4 tsp jeera
2 whole red chilies
1/4 inch ginger
2 green chilies chopped
1 medium onion chopped
1 tsp pink salt
1 sprig of curry leaves
1/2 tsp turmeric powder
1/4 tsp black pepper powder
3 tbsp grated coconut
