Ingredients:
1/2 cup onions
1 cup Tomatoes, blanched
1/4 cup peppers, cubed& diced
3 cloves garlic, chopped
1 tbsp fresh rosemary
1 tsp Salt
1/2 tsp Black pepper cracked
1/2 tsp Sugar
1 green zucchini
1 large aubergine, cubed
1/4 cup olive oil
2 tbsp Parmesan cheese
Fresh Basil leaves
Pine nuts
Sweet Paprika (Optional)
Parsley

Method of preparation:
Heat oil in a pan, add the aubergine and fry it till its 3/4 cooked.
Transfer the aubergine to a plate and saute the peppers, zucchini and onions in the same pan and give a toss.
Heat oil in a pan on high flame, add garlic and saute it.
Add pine nuts, saute it, add herbs, give it a quick stir and add in the tomatoes.
On medium flame add the sauteed vegetables, toss it and add salt, black pepper, sweet paprika, sugar, cheese, parsley, give it a quick stir and your Ratatouille is ready.
