Aloo Fry 1
– Potato, cubed- 4 nos. (around 300 gms)
– Onions, fine chopped- 1 medium
– Green chillies, chopped- 1 or 2 as per taste
– Coriander leaves, chopped- 2 tbsp
– Cumin seeds- 1/2 tsp
– Turmeric powder- 1/4 tsp
– Red Chilli powder- 1/2 tsp
– Salt- 1/2 tsp
– Oil- 1 tbsp
Preparation-
– Peel and cut the potatoes into cubes.
– Fine chop onions and chop green chillies and coriander leaves.
Process:
– Heat oil in a kadai and add cumin seeds. Once it splutters, give it a stir and add the cubed potatoes. Mix well and fry for 2 mins on medium heat.
– Now add the salt and turmeric powder and mix well. Fry on low heat for around 5 mins stirring it few times.
– Now add the red Chilli powder and mix well. Continue to fry for 2 minutes.
– Add the chopped onions and green chillies, give it a mix and cover & cook for around 5 mins on low till the potatoes and onions are soft.
– Remove cover & garnish with chopped coriander leaves.
– Mix well and serve hot
Aloo Fry 2
– Boiled potato- 4 nos (around 300 gms)
– Mustard seeds- 1/2 tsp
– Green chillies slit and halved- 1 to 2 as per taste
– Curry leaves- 15 nos
– Turmeric powder- 1/4 tsp
– Chilli powder- 1/2 tsp+ a pinch in besan
– Coriander powder- 1/2 tsp
– Besan -2 tsp & a pinch of Chilli powder mixed in 1/2 cup of water
– Salt- 1/2 tsp
– Oil- 1 tbsp
Preparation:
– Boil the potatoes, cool, peel and cube. Set aside
– Take 2 tsp of Besan and a pinch of Chilli powder, add 1/2 cup of water. Mix well.
Process:
– Heat oil in a flat pan and add mustard seeds.
– Once it splutters, add the slit green chillies & curry leaves. Give a mix.
– Now add the cubed boiled potatoes. Mix & fry for around 2 mins on medium heat.
– Add in the turmeric, Red Chilli, coriander powders & salt.
– Mix & fry for around 2-3 mins till coated well and light brown.
– Now pour the besan mix evenly over the potatoes & mix well immediately to coat the potatoes. Fry for 2-3 mins on low to medium till the besan is cooked and fried.
– Serve hot
