Ingredients:
Meat Stock
250 grams Mutton boneless
1 tbsp ginger-garlic paste
500 ml water
Salt as required

300 grams long grain Rice
2 tbsp ghee
3 nos Cloves
3 nos Peppercorn
1-inch stick Cinnamon
2 Bay leaf
1 onion, sliced
1/2 tsp red chilly powder
Dahi/Curd
Milk
Generous pinch of saffron
Generous fist of mint

Method of preparation:
Heat ghee in a vessel, add cinnamon, bay leaf, peppercorns, cloves, onion, salt, saute them until it turns brown.
Add ginger-garlic paste, mutton, give it a stir.
Add red chilli powder, rice, curd, milk, meat stock, saffron, salt, stir it well and allow it to cook for sometime.
After a while cover it with a lid and cook for some more time.
Switch off the flame and add mint.
Our Hyderabadi Zafrani Pulao is ready to serve.
