Ingredients for Mutton Masala
– Mutton- 750 gms.
– Onions, sliced- 4 medium
– Garlic paste- 2 tbsp
– Tomato purée- 2 medium tomatoes
– Green chillies, slit- 2 nos.
Whole spices:
– Black cardamom- 2 nos.
– Bay leaves- 2
– Whole black peppercorns- 10 nos.
– Turmeric powder- 1/2 tsp
– Red Chilli Powder- 2 tsp
– Coriander powder- 2 tsp
– Garam Masala powder- 1 tsp
– Curd/yogurt- 6 tbsps
– Coriander leaves, chopped- 2 tbsp
– Mint leaves, chopped- 2 tbsp
– Salt – 1 tsp or as per taste
– Oil
– Juice of lemon- around 1 tsp
Preparation:
– Wash and keep the mutton pieces to drain.
– Slice the onions, slit the green chillies and chop the coriander and mint leaves.
– Peel garlic cloves and make a paste to give 2 tbsp paste. You can add little water while grinding.
Process:
– Heat 4 tbsp oil in a pan and add the black cardamoms, whole peppercorns and bay leaves. Stir for a few seconds.
– Add the sliced onions and fry on medium heat till it begins to turn brown. This should take around 10 mins.
– Add the mutton pieces, mix well and sauté on high heat for 5 mins.
– Now add the garlic paste and salt, mix and sauté on medium heat for 3-4 mins.
– Add the turmeric, chilli and coriander powder, mix well and ‘bhuno’ on medium heat for around 5 mins, till the masala is cooked and has coated the mutton pieces well.
– Now add the tomato purée and slit green chilies, mix well and cook for around 5 mins on medium heat till the tomato is cooked and oil separates.
– Keep the heat on low and add whisked curd/yogurt. Keep stirring on low heat for around 2-3 mins till the curd is cooked. Continue cooking for 3-4 mins on medium stirring well till oil separates.
– Add 1 cup of water, mix well and transfer to a pressure cooker. Pressure cook till 4-5 whistles till meat is tender.
– Wait for the pressure to release and then open the cooker.
– Add garam masala powder, give it a mix and then add chopped coriander and mint leaves.
– Mix well and simmer for 2-3 mins.
– Finally add the lemon juice and mix.
– Serve hot with roti or rice.
