MIX VEG FRY RECIPE | ALOO GOBI MATAR SABZI
The mix veg fry is a very simple and quick recipe that can be prepared with any vegetables of your choice. This Aloo Gobhi Matar recipe goes well with both rice and roti.
Ingredients:
Cauliflower, cut into florets – 21/2 cups
Carrots, cut into small cubes – 1 cup
Beans cut into 3/4th inch pieces – 1 cup
Green Peas (shelled) -1 cup
Potatoes, cut into small cubes – 1 cup
Red Bell Pepper/ Capsicum small cubed – 1 cup
Onion , chopped – 2 medium
Green chili , slit – 2 Nos.
Coriander leaves, chopped – 1 bunch
Ginger garlic paste – 11/2 tsp
Cumin Seeds – 1/2 tsp
Turmeric Powder – 1 tsp
Red Chilli powder – 11/2 tsp
Coriander powder – 2 tsp
Salt to taste
Preparation :
– Cut & cube all the vegetables in 3/4th inch pieces. Wash & keep ready.
– Chop the onion & coriander leaves
– Slit the green chillies
Process :
– Heat oil in a kadhai & add cumin seeds. When it splutters, add the chopped onions.
– Fry till soft & then add the ginger-garlic paste. Fry till raw smell is gone.
– Now add all vegetables other than red capsicum.
– Add all the dry powders, salt & mix well
– Cover & cook in low flame for 15 mins . Keep stirring in between.
– Once the vegetables are half cooked, add the green chillies and the cubed red capsicum.
– Simmer till vegetables are cooked.
– Add the finely chopped coriander leaves & mix well before serving.
