3 ways to make gluten free kerala nice pathiri, rice pathiri, malabar pathiri. Kerala rice roti is known as pathiri, it is made with white rice flour, I just went a step ahead and used white rice with the bran to make it more nutritious and healthy. It is rich in fibre and thus will help to keep you satiated for a longer time.
White rice with bran as more fibre because of the bran hence the proportion of water to flour is slightly high. If using ordinary white rice flour then the proportion of water is 1:1.
You can get this rice locally in the name of “matta pachari”
Ingredients:
Matta pachari flour: 2 cups
Water: 3 cups
salt to taste.
