black rice, also known as forbidden rice is an ancient variety of whole grain rice which is dark/black/purple in colour. When black rice is cooked it turns dark purple. Black rice gets its dark color from the antioxidant called anthocyanin. It’s the same nutrient that is found in many purple-colored fruits and vegetables such as blueberries and eggplant. Black rice is very nutritious. It’s high in antioxidants, protein, and fiber and is a good source of iron. Black rice is gluten free. Whole grains are ideal for those with health issues like thyroid, pcos, and diabetes. The outer bran in the rice is the reason why it takes longer time to cook. Generally 1:2 ratio is ideal, if using small quantity then 1:4 is ideal. Also, it depends on the type of rice you are using and way you are cooking it. I noticed that this particular rice needs 2 1/2 cups of water for 1 cup black rice. Black rice has much lesser calories but is high in fibre, so ideal for weight loss and weight management.
