Black rice is high in protein and antioxidants, it has the highest protein among all species of rice. Kulith or horsegram is also high in protein and must in your diet especially if you have hormonal imbalances.
ingredients:
1/4 cup black rice soaked overnight
1 tbsp horse gram (kulith)
2 tbsp tur dal
2 tbsp masoor dal
1 tbsp virgin coconut oil or desi ghee
1 carrot
2-3 green chilies
ginger
1 tomato
4-5 shallots
curry leaves
1 tsp cumin seeds (jeera)
1/2 tsp turmeric
1/2 tsp roasted jeera powder
1/2 tsp Kashmiri chilli powder (optional, can reduce by half)
1/2 tsp black pepper powder
Pink Himalayan Salt as needed
2 cups of water
1/4 tsp hing/asafoetida
Coriander leaves to garnish.

After the first whistle reduce the flame to the lowest and pressure cook for 20 mins. Black rice does take longer time to cook. The khichdi will thicken once it has cooled down slightly.
