When it comes to Indian Breakfast, we Indians love Chole Bhature or Chola Bhature or Kabuli Chana Masala. For starters, this Chole is a spicy & tangy chickpeas curry and Bhatura is a deep fried bread made using a fermented dough. This Punjabi Chana Masala is my home style recipe and is one of my first recipes, have been making this for almost 6 years now, and no matter what always comes out great. Ingredients:
Chole / Dry Chickpeas – 1 1/4 cup
Black Cardamom – 2
Amla / Dry Indian Gooseberry – 2 tbsp
Tej Patta / Bay Leaf – 2
Salt – as per taste
Water – to soak & boil chickpeas
Oil – 3-4 tbsp
Cumin Seeds – 2 tsp
Green Cardamom – 3
Cloves – 4-5
Cinnamon Stick – 2″
Onions – 4 Medium (3 pureed and 1 Chopped)
Ginger Garlic Paste – 1 tbsp
Tomato – 4-5 medium (blended)
Salt – as per taste
Chana Masala – 1 tbsp
Red Chili Powder – 1/2 tsp
Cumin Powder – 1/2 tsp
Coriander Powder – 1 tsp
Black Pepper Powder – 1/2 tsp
Amchoor Powder – 1/2 tsp
Garam Masala – 1/2 tsp
Haldi – 1/8 tsp (optional)
Chopped Coriander Leaves – 3 tbsp
Ghee – 2 tbsp
Ajwain / Carom Seeds – 1 tsp
Ginger – 2″ (Julienne)
Green Chili – 2 (slit)
Anardana / Dried Pomegranate Seeds – 2 tbsp
Red Chili Powder – 1/2 tsp
