Chicken Biryani Recipe Karnataka Style – How To Make Chicken Dum Biryani – Chicken Recipes – Smita

Ingredients:
1 kg – Chicken
1 cup – Yogurt
1 tsp – Turmeric
Salt
1 tbsp – Garam masala powder
¼ cup – Ghee
5 medium size Onions (sliced)
½ tsp – Salt for onions
Green Paste
1 tbsp – Chilli powder
3 Tomatoes (Finely Chopped)
1 cup – Water
7-8 Baby Potatoes (Boiled)
Saffron Milk
2 tbsp – Melted ghee
Coriander (finely chopped)
Fried Onions

Ingredients for green paste:
5 – Green chilies
1 cup – Coriander
½ cup – Mint leaves
15 Garlic Cloves
2 inch Ginger
1 Large Onion (Chopped)
Water

Ingredients for Rice:
3-4 litre – Water
3 cups – Basmati Rice (soaked for 15 minutes)
2 ½ tbsp – Salt

Method of preparation:
Marinate the chicken with yogurt, turmeric, salt, half of the prepared green paste, and garam masala powder. Mix it well and marinate it for an hour.
In a wok, heat ghee, add onions and saute it till it becomes nice and golden.
Add a little salt to the onions so that they brown a little fast.
Add the remaining green paste and saute it till the raw smell goes away.
Add chili powder, and mix it well.
Add tomatoes and cook them till they are nice and soft.
Add the marinated chicken and mix it well.
Add a cup of water, cover it with a lid and cook it on a medium flame till the chicken is almost done.
Add boiled potatoes and mix them well in the curry.
Cook it for a minute and transfer it to a different vessel.
Add rice, saffron milk, ghee, coriander leaves, fried onions to the gravy, cover it with a lid and cook it on a dum on a very low flame
for 10 – 15 minutes.

Method of preparation for green paste:
In a mixer jar add green chilies, coriander, mint leaves, garlic cloves, ginger, onion and water. Make a fine paste of this.

Method of preparation for rice:
Boil water in a vessel, add salt, soaked basmati rice and stir it gently.
Cook it without the lid till each grain is nice, separate and almost done.
Cook it for 10 -15 minutes. Do not cook the rice completely because it will be cooked on a dum later.
Switch off the flame and drain the water.
Remove it in a thali and cool it.

Our Karnataka Style Chicken Biryani is ready to be served.
