Ingredients for Bread Halwa:

– Bread slices, crust removed & cut in squares – 8 to 10 slices
– Full cream milk – 1/2 cup
– Sugar- 1.5 cups
– Saffron- few strands
– Green cardamom powder- 1/2 tsp
– Cashews -10-12 whole ones
– Raisins (Kishmish) – 15-20 nos.
– Mix of oil & ghee for frying

Preparation:

– Cut & remove the bread crust, cut the slices into 4 squares.
– Deep fry the bread squares on low to medium heat in batches till golden brown & remove onto a plate.
– Fry the cashew nuts & then the raisins till golden. Remove & set aside.
– Take half cup of hot whole milk & soak few strands of saffron for 30 mins.

Process :

– To make the sugar syrup, take a saucepan and add 1.5 cups of water. Now add the sugar & mix it. Keep stirring on low for around 6-7 mins.
– Now take a pan and arrange the fried bread squares.
– Pour the sugar syrup evenly on the bread squares & switch on heat.
– Mix it well making sure not to mash it but for the sugar to soak into the bread.
– Cook on low heat for 2-3 mins or till most of the syrup has soaked into the bread.
– Sprinkle the cardamom powder & give a mix.
– Pour the saffron milk over the bread & mash gently.
– Once the liquids are absorbed fully, garnish with fried cashews & raisins.
