Egg Spinach Scramble | Anda Palak Bhurji | Egg Palak | Egg Spinach | Palak Egg Bhurji | Spinach Egg Fry
Ingredients for Egg Spinach Scramble:
– Eggs -3
– Spinach, fine sliced/shredded- 3 cups
– Onion sliced- 2 small (100 gms)
– Curry leaves- 2 sprigs (10-15 leaves)
– Ginger garlic paste- 1 tsp
– Turmeric- 1/4 tsp
– Red Chilli powder-1 tsp
– Garam Masala powder- 1/4 tsp
– Salt to taste – 1/4 tsp
– Oil- 2 tbsp
Preparation:
– Wash and drain the spinach leaves. Remove the stalk and finely slice the spinach leaves.
– Also slice the onions.
Process:
– Heat oil in a pan or kadai.
– Fry the sliced onions for around 4-5 mins on medium heat, till translucent.
– Add the ginger garlic paste. Mix & fry on low heat for 2 mins. Add the curry leaves & give a stir.
– Now add the turmeric powder & Chilli powder and fry on low heat for 1 min.
– Add the sliced spinach leaves, mix well and fry on low heat for 1 min. Now add 1/4 tsp salt or to taste, mix well and cook on low heat for another minute.
– Break the eggs side by side, sprinkle some salt on the egg yolks and cover for a minute.
– Now open the cover and fold in the eggs with the spinach
– Sprinkle Garam Masala powder and mix.
– Scramble and cook for 2 mins on low heat and remove.
