POORI WALE ALOO DUM | EASY ALOO DUM RECIPE | BENGALI ALOO DUM WITH A TWIST
Easy Aloo Dum Recipe | Poori Wale Aloo Dum | Bengali Aloo Dum with a Twist | Puri Aloo Dum Recipe | Poori Aloo Curry | Puri Aloo Curry
Ingredients:
– Potatoes, boiled & peeled (around 10-12 nos.)- 500 gms.
– Medium onions, made into a paste- 2
– Ginger garlic paste- 2 tsp
– Tomato purée, readymade or homemade – 4 tbsp
– Green chilies- 2 whole
– Garam Masala powder- 1/2 tsp
– Oil – 3 tbsp
– Salt- 1 tsp
– Sugar – 1tsp
Whole Garam Masala :
– Green cardamoms- 4
– Cloves – 4
– Cinnamon – 2 pieces
– Bay leaf – 2
Curd-Masala mix:
– Curd/ Yoghurt – 4 tbsp
– Turmeric powder- 1/2 tsp
– Red Chilli Powder- 2 tsp
– Cumin powder- 1 tsp
Preparation:
– Boil the potatoes in a pressure cooker with 1 whistle, cool & peel. Deep fry the potatoes till golden, remove & set aside.
– For the Curd- Masala mix, whisk the curd & add all the masalas indicated above. Mix well.
– Make a paste of the 2 onions.
Process:
– Heat oil in a kadhai. Add the whole garam masalas & bayleaf. Allow it to splutter. Add the green chillies.
– Give a stir & add the onion paste. Add a teaspoon of sugar & mix well. Fry for a minute.
– Add the Ginger Garlic paste, mix well & fry on medium for around 7-8 mins.
– Add the tomato purée, mix & fry for another 3 mins.
– Now, switch off flame/ heat, add the Curd-Masala mix & mix well.
– Switch the flame back on and keep stirring on medium for around 5 mins.
– Add a cup of water. Saute till oil separates and then add the fried potatoes.
– Cover & cook for another 10 mins.
– Now add the Garam Masala powder, mix & simmer for a minute or two.
– Serve hot with Luchi or Poori.
